Stirrup length is usually the cause for losing your stirrups at the canter only when they are truly too long. Whether they are shorter or longer for different types riding disciplines, you should be able to keep your feet in the stirrups at different lengths. But correct stirrup length does help.

How do you keep your heels down when cantering?

Instead of jamming your heels down, let your weight drop into your heels rather than onto the ball of your foot and into the stirrup. You really only want your heel to be slightly below horizontal, not pointing straight down. This is almost impossible to hold for any length of time and can cause muscle fatigue.
